Vegetarian Strips a La Pobre

A month ago, I tried to be a vegetarian for a week and see what’s the effect. And, it was a good experience. I got to plan my meal for the day, eat nutritious foods, and restricted myself from eating junk foods and drinking softdrinks. And part of the menu preparation is the going to the market to get fresh fruits and vegetables for supplies which I enjoyed so much.

This Vegetarian Strips a La Pobre, which I just felt naming it that way, is one of the dishes I prepared during the said experimental period. The vegetables used here are available at any season in the market and is cheap, so no need to worry for the budgeting because this is a super simple vegetarian dish.

Ingredients:

  • 2 carrots, cut in regular size strips
  • 1/4 kilo of Baguio Beans, cleaned
  • 5 regular size potato, strips
  • Onion leaves, cut in 2 inches long
  • 2 tablespoons of black beans
  • 1 Onion, chopped
  • 3 cloves of garlic, chopped
  • Salt and Pepper

After preparing the ingredients, saute the garlic and onion first in a wok and wait until garlic to turn brown. Add the black beans. Mix and let cook for 1 minute. Then, add the potato, carrots, and baguio beans strips. Cover the wok for 5 minutes. Add the onion leaves and salt and pepper to taste. Cover again for another minute.

Best served while it’s hot and crunchy.
