Shrimp Pasta Primavera

I love seafood and pasta, generally. So, I decided to look for a dish which I can combine both. It’s Shrimp Pasta Primavera. Pasta Primavera is a healthy dish because it’s a veggie type of pasta, with shrimp to twist it up a bit. You can also substitute the shrimp with meat, as you like.

Ingredients:

  • 1/2 kg. Fusilli Pasta
  • 1/2 cup boiled shrimps, medium size, shelled
  • 1/4 cup of black olives, sliced
  • 1 small carrot, strips
  • 1 head of broccoli, half-cooked and chopped
  • 1 cup of tomatoes, without the seeds, sliced
  • 10 pcs. of chicaro (snow peas), cut into small
  • 1 red bell pepper, sliced
  • Olive oil
  • Salt and black pepper

Boil the Fusilli Pasta for 10-15 minutes (or as suggested by the cover), add 2 TBS of olive oil to prevent the paste from sticking and a pinch of salt to taste. Before you drain the paste, add the broccoli to have it half-cooked. Then drain the pasta. Let the pasta sit for few minutes. On a pan with low heat, put ample amount of olive oil. Add garlic and tomatoes and toast it gently. Then, add the broccoli, chicaro, shrimp, black olives, carrots, and bell pepper. Toast it gently until all vegetables are mixed fairly. Add olive oil as necessary. Also, a pinch of salt and black pepper to add taste. take out the vegetable mixture and mix it with the Fusilli Pasta in a bowl.

Now, it is ready to serve. You can garnish it with chopped celery or onion chives. Best served with french bread and your favorite beverage.

    Hello sir, I am a fan of frustrated cooks. Just wanna ask about one of your ingredients.. 1 small strips of carrot???? what do you mean sir?
