Pinoy Chop Suey (Affordable Version)

Mom asked me to prepare the vegetables for our lunch today. I knew what she’s going to cook but I took charge and cooked it. It’s Chop Suey without the extravagant vegetables on it. So, I decided to label it the Pinoy Chop Suey (affordable version) as the vegetables used here are cheap and easy to find in the market. So, here are the  ingredients I used for this version of chop suey.

Ingredients:

  • 1 cup of shrimp (you can substitute this with meat)
  • 2 stalks of pechay (Bok Choi), chopped
  • 2 pcs. sayote (Chayote), prepared in small slices
  • 1 small pc. patola (luffa), sliced
  • 1 pc. carrot, in small strips
  • 1 pc. cabbage, chopped
  • 1 pc. red bell peper, cut in small strips
  • 1 pc. onion and 3 pcs. garlic, sliced
  • Cooking Oil
  • 5 cups water
  • Salt and Pepper
  • 1 tablespoon cornstarch, diluted in 1/2 cup of water

Having the ingredients prepared above, heat the pan and add oil. Saute the garlic until light brown and add the onions. Add the shrimp and pour 5 cups of water. Now add the cabbage, carrots, and sayote. Stir and cover the pan. Leave it for 3 minutes to allow vegetable to tender. Then, add the patola, pechay and red bell pepper. Mixed  it.  Add the diluted cornstarch gently and make sure that you have enough water in the pan so that the cornstarch will not become thick. Add salt and pepper to taste.

Preparing Pinoy Chop Suey (Affordable Version) dish may take 20-30 minutes. This is best served while hot with rice during lunch or dinner.

    love chopsuey! its the only veggie dish that I eat. I ask mom to cook one but with selected veggies only (so it won’t be sayang). I like it w/ carrots, sayote, cabbage & cauliflower or broccoli. mom puts shrimps too, but sometimes she uses chicken if no shrimp is available. yumm!
