Food Trip Face-off: Fruity Desserts, Knicker Bucker & Fruit Basket Parfait!

If you prefer something fruity and healthy choice of dessert, try the Knicker Bucker of Palmeras Restaurant (located at Pasonanca and also available at Palmeras, Paseo del Mar) and the new product, Fruit Basket Parfait, of Mr. Bean Cafe at Catribo Complex, Zamboanga City. I have tasted both and hmmm… yummy and healthy.
Ybet introduced me the Knicker Bucker few months ago and got addicted to it. Even though Palmeras Restaurant is far from downtown, we usually commute to the place just to have our craving satisfied. Luckily, Palmeras Restaurant opened a branch at the recently opened Paseo del Mar, a new tourist destination in Zamboanga City which is near downtown. Knicker Bucker is a mix of gelatin, mango, banana, and watermelon, cream and topped with strawberry ice cream.
Another dessert that you might want to try is the New Fruit Basket Parfait, offered at Mr. Bean Cafe. Still a fruity and healthy dessert; a combination of watermelon, papaya, peach, mango, pineapple, banana, and apple. Layered with strawberry iceam at the bottom and buko melon atop. There’s also almond jelly and drizzled with white choco sauce, evaporated and condensed milk. A bit sweet and yet delicious! Yesterday, I told Ybet about this new dessert and she asked me to go with her earlier today to try it. And, we did!

SATTI
SAMBAL: Soup
This is for an 7 – 8 quart pot
Ingredients
1. – Siling labuyo (Catumbal) 2 tbsp (4 if you want it “hotter”)
2. – Ginger 5 thump size
3. – Turmeric (azafran) 4 thump size
4. – Onions 1 fist size
5. – Oregano 4 leaves
6. – Oil
7. – Shrimp paste (Bagon) ¼ tsp
8. – Tomato 4
9. – Taro Root(tumon) ¼ of a fist size
10. – Flour 1 cup
11. – Corn Starch ¼ cup
12. – Sugar 1 ½ cup
13. – Salt 1 tbsp
14. – Anito Power (Achuete) 15g (1½ pack)
15. – Knorr Cube 3 cubes
16. – Anito Power (Achuete) 15g (1½ pack)
17. – Coconut milk (gata) ¼ cup or less
18. – peanut butter 1 tsp
19. – Curry Powet 1 tsp
Step 1: Boil 6 quarts of water (add know cubes when boiling starts, stir,)
Step 2: Mince and Blend ingredients 1 to 5 ( add small amount of water just enough to start the blend)
Step 3: Boil taro root then blend (can also be boiled in step 1)
Step 4: Mix ingredients 10, 11, 12,13 and 14 in a bowl (don’t add water)
Step 5: Sauté (Gisa) shrimp paste and tomato with oil then add the mixed ingredients 1 to 5 (Sauté until semi dried)
Step 6: Pour the sauté into the boiling water, stir, then add coconut milk
Keep in medium flame for 15 – 20 minutes with frequent stirring to avoid sticking on the pot.
Cool down for 2 minute then serve. Enjoy
SATTI: Beef or Chicken on sticks :
- Marinate with calamansi, salt, sugar and a pinch achuete
- Brush with coconut milk (optional)
PUSO’: The Rice
Just cook it in a rice cooker with less water – just enough to cook the rice.
