I have always been wanting to bake cookies and finally, here it is. I decided to create my own mix of cookie dough. I prepared this for a specific purpose, keep me full during the dawn. Well, that’s why I thought of doing a coffee-based cookie with oatmeal. Coffee for keeping me up and oatmeal is rich in fibers… just being “health-conscious.” Like other cookies, it’s easy to prepare and with similar steps.

Ingredients:

  • 2 cups of oatmeal
  • 2 cups of flour
  • 1 tablespoon of baking powder
  • 1 cup of brown sugar
  • 1 tablespoon of salt
  • 3 eggs
  • 1/2 cup of water
  • 2 tablespoon of coffee powder

First, grab a bowl and mix all dry ingredients together thoroughly. Then, add the eggs and water. Take a wooden spatula and mix until all ingredients are well combined. Pre-heat the oven and brush a little oil in the baking sheet to avoid the cookie dough from sticking. Now, start putting a spoon-full of cookie dough in the baking sheet one after the other. Then put in the oven and wait for 15-20 minutes to cook.

When done, you can serve this coffee oatmeal cookies during breakfast or snack time. Also, you can store extra cookies in closed container for later consumption. Enjoy!
