Chinese Noodle Crackers

This is one of the few snack foods I learned to cook when I was in high school during our entrepreneur class. This is a classic snack food in our town made from dried Chinese noodles, locally known as “chika-chika”.  I decided to cook this again because we have some left-over noodles which might get wasted, instead I used it to prepare a simple snack.

Ingredients:

  • 1/2 kilo Chinese noodles (or fresh pancit noodles)
  • Cooking oil
  • Salt, and monosodium glutamate (MSG, bitsen)

Preparing this snack is simple. With the fresh Chinese noodles, dry it under the sun until its hard. This may take hours like 5-6 hours. If you plan to cook this, dry the noodles earlier in the morning until the afternoon or a day before. When its ready, preheat pan and add oil. This is like deep frying, so adjust the oil as required. Then, put the dried noodles slowly and keep and eye on it so that it will not burn. This is a quick fry procedure so keep the fire under control. Fried noodles are ready when it pops or grew in size. Also, make sure that it will not reach brown because it will start to burn the noodles. Put the fried noodles in a bowl or casserole. When all noodles are done, add 1/4 tablespoon of salt and 1/4 tablespoon of monosodium glutamate (MSG, bitsen) to taste. Tumble or mix it slowly. You can also add other powdered flavoring such as cheese, BBQ, or sweet and sour. You can get these flavorings at your grocery stores. Now, you can enjoy this simple snack while watching TV or just chatting with friends around. Excess Chinese noodle crackers can be stored in a closed container to keep it fresh.
